Retain source coordinate values with nearest neighbour interpolation

When doing nearest neighbour interpolation, retain the source coordinate values for each data point i.e. if the data at point (52N, 20E) on the new grid was derived from the data at (51N, 19E) on the original grid, retain the latter coordinate (for every point in the new grid) e.g. as AuxCoords.

Motivation

To know when looking at data interpolated using nearest neighbour interpolation what is the source of the data at each point, so it can be checked, for example, whether any data was interpolated a long distance, and to know the original coordinate of data when interpolating to a single point.
