Override the current date/time to view graphs/stats from a historical perspective.

An option to archive/save what we have tracked or graphed would be useful. It should also automatically freeze the 'Time Since' graph.

You can already save and restore the database. I think your request is better described as an ability to override the current date/time used by the app. I can't see a lot of benefit for most users here so I am unlikely to take this on any time soon. I will leave it here in case another developer takes interest.
