[DOCUMENTATION] - Appointment Type - Global Picklists

Per a previous Sprint, there is additional documentation needed on the utilization of Global Picklist in association to Appointment Category.

Why are they categorized the way they are? What is the intention of them? How are they difference from other picklists?

Overall need more insight into Appointment Category on Appointment Types Object.

Appointment Category and Appointment Type are correspond with one another, so that should be included in the documentation.
