Simpler Zend\ServiceManager construction in README.md

As per discussion on https://github.com/Roave/behat-psr11extension/pull/1#discussion_r132402227

@Ocramius reckons we can instantiate Zend\ServiceManager in a simpler way than the example from the Expressive skeletons.

Look into this and implement.
