Fastest Way to Backup 512GB SD on Pi Zero W

for backup options I've chosen IMG & Shared-Folder

since Pi Zero W has only limited ressources and with that options I'm afraid that it will backup the whole 512GB to the IMG-file I want to know what's the fastest way to backup

I just want data/config without free space
