With regards to the finite resource depletion problem, maybe we could have a scavenger building and worker. With this building enabled, skeletons (but maybe not carrier skeletons) and demolished buildings would not disappear but he could 'mine' them for iron ore, gold and stone just like quarries mine stone from granite chunks.

Alternatively, because building scavenger huts near every demolition or skeleton might get annoying, you could send out scavengers from flags like scouts and they'd bring the stuff back to the HQ/storehouse/harbour where they were. That way you could also spam them if there was heaps to scavenge from, but only send one when you just burn down a single building. There's also a problem of 'who would scavenge a demolished scavenger hut'?
