Updates the service_attachments to reduce from 40 to 1

A recent update to the RedisCloud Service has reduced the number of service attachments from 40 to 1. The focus on this PR is to align the Terraform provider to recent changes.

TODO:

  • Update the rediscloud-go-api to process a single service_attachment from the api
  • Update the provider to process the sevice_attachment as a list of one item to try and not impact users.
