Add support for mac catalyst in xcframework

I've noticed that xcframework that is supplied with release is missing symbols for mac catalyst. Seeing that there is no need for it to be adopted i added support for it in xcframework

The motivation was seeing this errors when i was working on adopting out app for iOS 16 (in Xcode 14)

However i didn't even build for this target - iOS simulator at the time of receiving this error (I received it when Xcode was indexing some stuff)

My integration of RxSwift is through .xcframeworks
