Add categories to route collections

Blocked by #700. When someone creates a route collection, they should be able to attach a category to it. Categories can be as follows:

• PUG-friendly routes
• Beginner routes
• Intermediate routes
• Expert routes
• MDI routes

More categories can be added obviously. I purposefully want to keep key level out of this.
