finalising {gtsummary} wrappers

• [ ] add_crosstabs() needs to take arguments from a gtsummary::tbl_uvregression() rather than user inputting them
• [ ] gt_mh_odds() needs to be finalised to include rr and irr
• [ ] documentation needs to be cleaned up
