Replace `ibm_brisbane` with `ibm_fez` in some notebooks

Follow-up to #4307, in which I had to add these notebooks to the ignore list to get CI passing. This PR fixes the notebooks by switching ibm_brisbane (sunset) to ibm_fez.

Commit 0bbaa22f27a913e84d89c773543c8ce4ad7a8c3a will need the closest review, especially to make sure the content still makes sense.
