Update `build_cutout` images

Incorect Information

Issue Description

The build_cutout.py module has images showing what weather data is extracted. This is built using the existing cutout that is pulled for the western interconnect from Zenodo. Once we have sorted out what default cutouts will be available to the user, we should update these images.
