Extend medical submodule

This issue is mostly aimed at linking the conversation in this PR (https://github.com/PyLops/pylops/pull/697) for future development of the medical submodule.

The main directions for further development identified in the PR are:

  • [ ] support for GPU backend in CT2D
  • [ ] implementation of CT3D
