Chore: Upgrade monaco-editor by creating custom vue component

We need to upgrade monaco-editor, but for that we need to replace monaco-editor-vue since it seems it has been abandoned. I suggest creating a custom component (that could be published in the future even).

This should also tackle #597. Let's keep these two issues separated to track the upgrade and that the features are all working properly.
