Add 2.x docs versions to Mintlify site

Summary

This PR adds Mintlify to Prefect

Thank you. Probably easiest to limit the changes exclude the 3.0 docs to avoid merge conflicts.

Thank you for making the space here smaller. It's still such a large PR that GitHub is having difficulty rendering it. Would be be possible to cut it into a few PRs?

I did a quick spot check on a few pages and I think the URLs looked ok. There was still some !!! note formatting from Mkdocs that will need to be <Note> </Note>. See example below:
