Steps to Reproduce and Observed Behavior
This is not just "git gud"; it's an accessibility issue. The first night was so dark that I can't do anything, even with my screen brightness turned all the way up. Even when planting torches on the second night, it's hard to see things, even when they are in close proximity to the torches.
Expected behavior:
At minimum, I would like to be able to place down torches and not strain my eyes/get a headache when trying to see around them. The Hades game for Luanti has the same problem: torches are way too dark. IMO brightness is the wrong lever for lighting tiers; it's much better to do lighting tiers by distance instead.
It would be nice to at least see at night without needing torches.
Longer term, I would also expect a brightness slider, since there's no one-size-fits-all solution here. Gamma correction has been mentioned as one possible way to implement this.
But it's also possible there's some bugs in the graphics engine too, which are rounding down colors to zero at night. Or brightness is on a linear scale when it should be on some order-of-magnitude scale. Given how unhelpful increasing screen brightness was, I wouldn't rule that out.

This is intentional, although not necessarily on the surface. Only darkness that is meaningful is true 0 black darkness that cannot be lit up with raising gamma. If you want to see all the time just disable daylight cycle, why bother if nothing changes with the night?
