[WIP] Cleanup and documentation

This Merge request aim to update the project and make it compatible with modern flutter :

  • Remove deprecated dependencies
  • Migrate a modern Gradle version
  • Use Java 17/21 and Android SDK 35
  • Write documentation to allow contributors on-boarding
