[BUG]: Mac fails to build when using Qt 6.8.0

Describe the Bug

Our Mac CI currently does not function correctly when using Qt 6.8.0 due to the patch in the build deps script on line 230 to 259 I am unsure as to why this is the case and am just leaving this here as a future note to anyone who looks into this.

Reproduction Steps

Apply Qt 6.8.0 to the mac build deps script and observe the CI fail when Installing Qt Base.

Expected Behavior

The CI not to go kaboom.

One other note: Qt 6.8 drops support for macOS 11, so we should wait until there's a feature or bugfix we're interested in before upgrading.
