Update email contact for opaquenamespace dot org

Describe the bug

ons.org landing page currently has...

For more information or questions, contact us at [email protected].

...but this email address is out of date (UO Digital Scholarship Center no longer exists). @jsimic says change email address to [email protected]. I think ONS merits its own contact address (at some point) and would volunteer to field emails, but happy for the Oregon Digital address to be used if that's easiest for now.

Expected behavior

A mailto: link with a functioning email address, which is checked regularly by staff who work on opaquenamespace, is displayed and clickable.
