Using Parallels to run the lab

FYI, I'm looking into running the lab on a Mac M1 using Parallels instead of VirtualBox (not sure that if it's even possible).

The first issue I ran into is the fact that there are no box available for the Parallels provider.

I checked to see if I could build them myself and ran into this issue: https://github.com/StefanScherer/packer-windows/issues/320

We can keep this issue open to track the progress.
