Why is this feature being added?

After discussion in the mentor channel it was discussed that we want to determine if transitioning away from Airtable is an option. Creating this issue to scope out the problem and write out all the user stories.

User stories that were discussed:

1. Mentors and admin staff want to view mentor requests
2. Mentors want to be notified when a new mentor requests is received
3. Mentors want to be notified when they have a matching skill set
4. Admin staff wants to be able to track time mentors spend with mentees
5. Mentors want an easy way to submit time tracking
6. We want to be able to add items for mentor options
7. We want to be able to mentor people on contributing to operation code

What should your feature do?

Break out the user stories into issues and scope them out.

Between this change, slack integration and the new jobs portal this is a good time to start using github projects.
