Keep environment .yaml and installation instructions up-to-date

Desired capability or behavior.

• Recreate conda environment file, as well as provide Python virtual environment equivalent. Test using these environment files on as many installation environments as possible (testing on different OS are top priority)
• Re-walk through installation instructions on docs with as wide a variety of supported Python versions, OS, etc. as possible. Find any issues and fix instructions
