Customizing the Ribbon Menu

I have figured out to apply customizations and publish them (eg. adding a new tab to the main screen), but haven't been able to find a way to customize the ribbon menu. Can anyone point me in the right direction?

When you Sam customize the ribbon menu, do you then mean the buttons like ”Create New Project” and ”Delete” ? I am looking for a way to hide those buttons.
