Not really my call, but I'd say it's a rare enough case that we don't need to worry about it. The can unfollow manually if they want to.

Are there related functionalities we should think about? Automatically following datasets that the user has created or edited, for example?

This issue isn't directly related to the U2U work, but came up during that call as part of the discussion about onboarding new users, just FYI.
