Remove Stoplight Studio from page about GUI-based tools; it's no longer available.

Describe the bug The doc here https://tools.openapis.org/categories/gui-editors lists Stoplight Studio as a GUI-based editing tool. It is no longer offered, and outstanding copies no longer let you load local files.

To Reproduce Steps to reproduce the behavior: Try to download and install Stoplight Studio.

I would agree. @SensibleWood how do we remove a listing from the repo?

Looking at the list, I also noticed that a bunch of these are Web-only. So I filed this.
