I don't know any opensource app that does something similar, so I think it would be a great upgrade for your app. Currently I use App Ops to monitor clipboard access, unfortunately it's not opensource.

No Clue About how far we can accomplish this Natively on Android. Any suggestion for implementation procedure is most welcome 😁
