[Documentation]: Additional Tutorials using "greatest hits data"

What would you like changed or added to the documentation and why?

From the user/dev days, one feedback was to have tutorials be more "interactive" and not as much of a lecture. We've discussed already to use "influential" datasets for the community to see how they would have been stored in NWB and I believe combining the two by making notebook style tutorials (similar to a "lab hour" being an add-on to a university lecture) would keep people's interests and make NWB feel more "real/applicable".

Let's start with selecting one domain that has this well-known dataset and create the tutorial. Possibly we could get feedback on this test notebook interactive demo during the Rehack since this is "reusing data". @rly @oruebel

This would also be great for Cosyne 2024. @rly @oruebel
