Remove dependency on Goerli testnets from Juno environments

update of automated test suites to versions which support Sepolia
update test environments with Sepolia-based test artifacts
remove Goerli references from Juno code

I think it would be a good idea to break this into much smaller issues that interns etc could work on. I've opened a new issue here https://github.com/NethermindEth/juno/issues/1758

We still have references to goeril2 and integration networks in the codebase. It would be good to remove those as well.
