Switch to gnark felt after 0.12.2 is released everywhere

We also fixed the state commitments (old_root / new_root / state_root) fields to have 0x prefix like all other felts do. Other than that no behavior changes.

with 0.12.2 we dont need the custom unmarshaler anymore
