I think letting the user choose their own instance is a better option. Maybe ask the user which instance to use and have a text input to insert a URL of any instance when they choose Libre translate.

Maybe, if it now works properly (translation quality wise), we could maybe add this one https://libretranslate.de/. No API key required for now.
