Improve the current documentation on RapidsShuffleManager

We have been using the multi-threaded mode in RapidsShuffleManager for some time in our performance cluster, with good results. This task is to adjust our documentation here to recommend this mode for users, as it doesn't require extra hardware or software to be installed, just configs, and we see performance gains in some scenarios.
