Update notebook examples

Fix notebooks not working here and there.

• document how to start required containers
• fix deprecated model names
• fix FAIS.load_local() refuses to load local .pkl files.
• fix nvapi_key does not pick-up the NVIDIA_API_KEY environment variable.
• parameterized uri of chain-server (in notebook 01)
