Workplace assistant has references to workbench

Describe the bug

A user noted confusion because of the column environment_name has value workbench but the resource server in NeMo Gym is named workplace_assistant. The user was also unclear why the category column has workbench_ prefix for all values

Steps/Code to reproduce bug

Dataset: https://huggingface.co/datasets/nvidia/Nemotron-RL-agent-workplace_assistant Column: environment_name in the dataset which has value workbench Column: category in the dataset has prefix workbench_

Expected behavior

No references to workbench.

We should update the HuggingFace dataset description and resources server README with references and citations to the original Workbench https://github.com/olly-styles/WorkBench
