Update structural-diversity-discrete-return tutorial to work with the latest lidR package

From Elizabeth La Rue: This was a tutorial originally written for a NEON associated workshop in 2020 but the code doesn't work anymore due to extensive updates on the lidR package. I recommend taking it as a defunct old code.
