Good morning/evening! I located the issue and apparently something broke when moving from Ubuntu 18.04 (the one in the screenshots) to Ubuntu 20.04 (GNOME itself moved to 3.36). The gnome-shell.css (which defines the top bar and the left side bar) can be found in /home/$USER/.themes/Aritim-Light-GTK/gnome-shell/.

I'm trying to modify it but this will take some time as I don't use GNOME and I have very little time to concentrate on side-projects like themes right now. Hence the "help wanted" label, I'd be glad if someone is willing to help me on the task.

For now, in case you want a temporary better solution, you can visit https://www.gnome-look.org/browse/cat/134/ord/rating/ and find some more complete GNOME shell themes.

One solution I found was that it still looks good with Dash To Panel. I don't have any experience with making GNOME Shell themes, but I might give fixing this a try.
