[FEAT]: Progress report for embeddings

What would you like to see?

When bulk-embedding hundreds of PDF files in one go, it would be very desirable to have SOME kind of feedback regarding the progress, like the percentage of total files processed.

Right now, it's just a spinner spinning forever.
