change playlist vars to not have wallrunning/doublejump by default

This default behavior is not what most people expect, and consequently there are a lot of people asking how to turn it off in the Discord. I believe that it makes more sense to have it off by default, as this is the default Apex behavior and I suspect less people will ask about how to turn it on than how to turn it off.
