Ability to cross out Notes / tick off for To-Do style notes.

I'm thinking that when a player clicks on a line of a note it would cross it out by adding §m before the text to use Minecraft's built in text editor. We currently can already do this by adding §m before the text but this has to be done manually and not everyone knows how Minecraft's text editor works. How difficulty would it be to add this functionality?

It would make To-Do style lists a lot more functional and interactive.
