Add option for the user to specify the name of the Project namespace

Sometimes extensions are hardcoded to expect the Project namespace to be named Wikipedia (yes, that is the extension's fault) — having an option when creating a Patch Demo to specify the name of the Project namespace would be helpful

Which extensions do this?

We could just set the default namespace to be Wikipedia, as our configs tend to reflect whatever is most commons on WMF wikis.

Admittedly, the only extension which springs to mind is PageTriage
