Default to celsius temperature unit

I'm still pondering this. I'm in the US and for better or worse, the default unit here is F. It should be a one-time change and not a big deal, but I believe over half of the AirGradient units are located in the US, although I can't speak to which ones are running this ESPHome based firmware vs the stock firmware.
I feel that in scientific communities, SI units are dominant. I guess AirGradient also defaults to Celsius:

Would be interesting what https://app.airgradient.com/ defaults to. I did not try because I did not find a "delete user account" button to clean up the test user again.
https://en.wikipedia.org/wiki/Fahrenheit gives a nice overview which countries still default to Fahrenheit ;-)
I believe that the Dashboard changes the default depending on what country you are configured with.
I know the AirGradient repo's ESPHome config defaults to C, as that was the one thing they changed when they forked from this repo.
I know it probably should default to C, just give my American stubbornness a bit to soften. ;)
As an American, I prefer 'F' as default. Freedom units are best units. :)
Edit: Though, default to C makes most sense. I concur.
That said, I'm going to immediately reverse the change on mine. ;)
