I don't see how either DHCP or NetworkManager matter here. When pasta starts it should copy the ip addresses and routes from the default interface. Can you actually reproduce this...
Well all I can say that NetworkManager + dhcp should work fine generally with pasta, if not we would have ton of reports of it already unless some recent update...
