Log config when saving models

At the moment is very difficult to identify training params etc. when looking at model outputs. At minimum we should save these in the info.txt file that is created when a model is saved. Ideally we would extend this to something more comprehensive, e.g. https://mlflow.org/docs/latest/introduction/index.html as suggestion from Ed.
