[*.rs] Upgrade dependencies ; resolve deprecations

Depending on your response to this PR I will send further ones to:

• improve error handling Result and ? everywhere; no unwraps outside of tests;
• produce JSON deserialisation options for your structs
• resolve any issues found with Alpine and distroless docker images when it comes to ODBC
