Are you sure it isn't just taking a very long time? You could try to install the Everything search engine to speed up application discovery.

What exactly are you thinking about? You can search for 'blender' and it will show you all of the different versions.

Check "show system components" and "show protected items" to see Edge. You have to disable protection to uninstall it.

This shouldn't be related to defender unless something else is wrong with your system. I would guess that windows update is currently installing something, or some other application is causing...
