Replace long sequences of dbs with strings using a text table

I don't see any reason for us to be using direct bytes when we could be mapping strings to the bytes for greater clarity. Not really a big difference, but it annoyed me when I saw it, so here we are.

Ideally I'd like to see more consistent capitalization (the "it's" in the big key text for grammar reasons, and item names to match vanilla text which capitalizes item names), but for ease of verification that nothing breaks, I left them alone.

I built the baserom at HEAD and got a CRC of A20EA2FC, and then built it again with these changes and also get A20EA2FC.
