Slow streaming performance on less powerful models

Experienced using the streaming functionality on a raspberry pi 2 zero W with OS bullseye was soo slow it resulted in the Raspberry Pi to hang. This is not something I experienced previously so is likely to do with the new operation system and potentially opencv, also given the new raspberry pi zero is considerably faster it should work.

Some testing and fine-tuning is needed and added detail to the documentation for working with slower models and different operating systems.
