Cleanup the repository and streamlining the release process

I'm just putting this here, for things I want to do eventually (everyone is welcome to help with the below)

• [ ] Clean up the root of the repository, removing stuff no longer used / needed.
• [ ] Convert the setup.py to Poetry
• [ ] Setup CI to run black and other stuff.
