Could we get a "Lock UV Mapping" option?

According to an older suggestion it should already be in Blockbench, however, I've checked everywhere. And it's gone. Either that or phrased really oddly.

It's exactly like it sounds. It locks the UV Texture mapping for easier scaling, especially in groups.
Are you talking about mesh or cube UV? Which format are you working in? Is there a case where you are modeling and it changes UV when you don't want it to? What do you mean by scaling in groups? By lock, do you mean lock the UV to the global position, or the the current values that it's at? Lock to global position would be the Relative UV option in the outliner.

cube UV, generic model format, any time rescaling multiple items (like how Roblox Studio models work, if you've ever used that.) and i mean locking it to how the texture looks at one size
Scaling or resizing elements should not change UV unless auto UV is enabled or the UV Mode is set to Box UV. So there might be another issue at play here.
