Add testing for multiple arches, non-desktop variants

Currently testing only really covers a x86_64 Desktop which means we sometimes miss stuff when adding features/fixing bugs (eg https://github.com/Jake-Shadle/xwin/pull/48), so should test when using multiple arches and/or variants. More variants would hopefully be addressed in #2
