Improve release process

Releasing Github Actions and updating tags is quite tedious, I'd like to have a better release process.

This might be useful: https://github.com/technote-space/release-github-actions

This should also ensure that the documentation that users see by default (the README of the default branch, currently master) will always match the latest release, to prevent issues like #2.
